  • Salt and pepper to taste

  • Preparation:

    1. Prep the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rice with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let rest for 5 minutes. Fluff with a fork.
    2. Sauté the Aromatics: Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until softened, about 5 minutes. Stir in the ginger and red pepper flakes, cooking for 30 seconds more.
    3. Create the Sauce: Pour in the coconut milk, vegetable broth, lime zest and juice, soy sauce, and honey. Bring to a boil, then reduce heat and simmer until the sauce thickens slightly, about 5 minutes.
    4. Cook the Salmon: Season the salmon fillets with salt and pepper. Add the salmon to the sauce, making sure it’s coated. Simmer for 5-7 minutes, or until the fish flakes easily with a fork.
    5. Assemble and Serve: Divide the rice among bowls. Top with the salmon and sauce. Garnish with fresh cilantro and serve with lime wedges.
