2 pounds boneless chuck roast, cut into 1-inch cubes

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon dried oregano
  • 1 (28-ounce) can crushed tomatoes
  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 4 cups beef broth
  • 1 cup dark beer (optional)
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Sour cream, for garnish
  • Shredded cheddar cheese, for garnish

  • Preparation:

    1. Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Season the steak cubes with salt and pepper. Sear the steak on all sides until browned.
