  • 1 large pineapple, peeled, cored, and cut into chunks
  • 1 red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Vegetable oil, for grilling

  • Preparation:

    Marinate the Steak:

    1. In a large bowl, combine soy sauce, honey, red pepper flakes, black pepper, and salt.
    2. Add the ribeye steaks to the marinade, ensuring they are evenly coated.
    3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to overnight.

    Prepare the Pineapple Salsa:

    1. In a medium bowl, combine pineapple chunks, red onion, red bell pepper, green bell pepper, garlic, and ginger.
    2. Toss the mixture to combine and set aside.

    Grill the Steak and Vegetables:

    1. Preheat your grill to high heat.
    2. Remove the steaks from the marinade, reserving the marinade.
    3. Grill the steaks for 4-5 minutes per side for medium-rare.
    4. While the steaks are grilling, grill the pineapple salsa mixture until slightly charred and softened.

    Assemble the Dish:

    1. Once the steaks are cooked to your desired level of doneness, remove them from the grill and let them rest for 10 minutes.
    2. During this time, heat the reserved marinade in a small saucepan over medium heat. Bring to a simmer and cook until slightly thickened.
    3. Slice the steaks and top with the grilled pineapple salsa.
    4. Drizzle the thickened marinade over the steak and salsa.
